It seems to me that much of analytic philosophy is concerned with exactly the issues of language, theory of meaning, and conceptual schemes which you are referencing. My suggestion is to read W.V.Quine, Hilary Putnam, Donald Davidson, Michael Dummett, Jerry Fodor just for starters. Dummett is perhaps the most read in his concentration in language and a theory of meaning (as well as his antirealism - he truly is a great philosopher - one of my favorites). Has a book entitled "The Seas of Language" which is very good (a very difficult read for many folks).
