I think what you are missing here is that humans are the 'center of the universe' when it comes to understanding the world around us. Everything about the world must be interpreted by us in order for us to survive and thrive in the world. If the Copernican principle aids in that regard, then I'm all for it as long as we don't have to give up more meaning than that principle is worth in that endeavor.
