Ah, adaptation over thousands of years. Survival of the fittest as climates and ecosystems change.
I know you won't view that as evolution, but what you describe is part of that process.
If the seas were less salty thousands of years ago, why did sailors for all of history know not to drink sea water, because the salt killed them?
