You assume because we lack full knowledge that somehow this makes us completely ignorant. As I showed you with numerous pictures, we have overwhelming near-visible evidence that stars are created in condensed nebula clouds that form into disk shaped proto-solar systems.

In any case, the formation of galaxies is still an area of active research. One interesting hypothesis is that galaxies experienced a massive fireworks display:

Of course, you are looking for irrefutable answers before you can believe anything astrophysicists have to say, right? If so, then you ought to forget your interest in science at this stage. This is not how discoveries happen.
