What Am I Seeing?

HI,
I got an ep with my scope. A 25mm SMA. It`s not a very good ep. It has center of focus with the edges out of focus very slightly when the center is in focus. My question is what is it that causes this? I`m asking so I can avoid this type ep in future purchases. I also have a 26mm to 8mm zoon that does the same thing.
