When scientists use the word "know", they just mean the theory hasn't been disproven yet and there's a lot of evidence for it. The big bang is popular because it has been around for a long time and has predicted several things (including the CMB). The things that it predicted could be explained in other ways, but none that are as simple as the big bang. Thus, using a combination of Occam's Razor, history, and logic, the big bang has become the most accepted theory for the origin of the universe.
