The atmosphere does that with the planets. They go in and out of focus all the time. You have to sit and keep watching for those "Moments of Clarity". High magnification only makes it worse. High magnification also makes it harder to keep the image in the field. It moves to fast. The EQ mount is not so easy to maneuver at the zenith. But it's easier than the Dob. Everything you mentioned sounds in order to me.
