Because 3-dimensionality of space mathematically results in inverse square law (same as 2-D space results in 1/R law, 1-D space results in constant force, and so on), which (inverse square law) we can measure with high accuracy.

And vice versa, if in some universe we have inverse square law for interaction, space mathematically must be 3-dimensional. That is why we know it IS 3-dimensional.

No need to philosophise about "totally unknown processes" and "totally unknown sences" - it is all mathematical.
