Well, because if "in reality" everything consists of anything else on deeper level, (and possibly on and on - although with simplification/ unification as it was before and continue to be), then we just have to learn how things interact and work - level after level. That is the goal of science.

This way we may never get to "absolute reality" because there is non, but we explain and correctly predict more and more things (and use new knowledge to more and more improve our life).
