Paul,

I agree that some beliefs are automatic and cannot be questioned because we are simply unaware of them. But, I think other - probably an extremely high number of beliefs - we are aware of (e.g., things around us exist), but we aren't willing to doubt. And still others we accept in some from of probablistic fashion as you suggested.
