How Much Does Size Matter?

I'm new to astronomy and don't currently own a telescope. I have for some time been spending long nights with my cousin who owns a Meade 4'5 inch reflector. I have seen various planets (Saturn and Jupiter being the only 2 remarkable things I've really seen) and I am in the hunt to buy a telescope for myself. I'm thinking of buying a Meade DS-127ec, though I'd hate to spend $500 now only to spend $1500 more 6 months from now on something that would be more satisfying.

My real question here is.. What will the real differences be visually looking through a 5-inch 1020F compared to looking at it through a 8 or 10-inch 2000+F telescope. In my experience looking through the 114mm has been Saturn which was small, relatively colorless with an obvious grayish ring around it + 1 or 2 moons. With Jupiter, When I 1st looked at it I thought we were looking at a far away star with planets revolving it J though I/we quickly realized what we were looking at. At high magnification i.e.: using his sr4mm lens nothing would come into focus entirely.

Anyway.. any sort of feedback would be appreciated.. Thanks.
