Baffled By Baffles

I'm reworking a Meade 8" Starfinder. Painted it a navy blue and installing some flocking paper to darken the interior. Then will work hard to precisely collimate the optics. Installed a low-profiel Crayford focusser I bought from JMI.

Question: I've seen reference to baffles as being especially essential. Why? What are they? Where can I get some good information about them? Thanks!
