You specifically asked about measuring resolution rather than calculating it. I am not sure about your project and wonder if it is a kit our something you put together. Did you grind the mirror. Any way you may visually observe objects at a distance and calculate the resolution. Viewing double stars would be one way.

Commercially a target is used that has different line-pairs of known separation which is photographed.
