Kevin, 1.625" thick is a good thickness for pyrex disks, but this is on the thin side for a 30" diameter mirror. A 2.125" thick disk would be easier to make for an amateur because it would flex less while grinding and polishing.
Newport Glass Works sells a 30" x 2.125" pyrex disk for $1750, this is the commercial anneal blank. It weighs about 122#.
