The truss design really doesn`t make much sense for the smaller sizes unless you want a backpack scope for airline travel. The F7 is only a tube that will be 60"-66" long and that shouldn`t be a real problem for moving around. Generally, over about 14" or so, the truss becomes a lot easier to do.
As far as getting a large mirror, why not find out where the optics guru is in your club? He will probably help you a lot in getting a nice mirror ground and, if you don`t mind a little bit of a slow cooldown compared to pyrex, a plate glass mirror will usually do you quite nicely as your first mirror grinding project.
